Under the name of "Gastronomy and Origin" and organized by the DOP Calasparra, a meeting was held this Monday that brought together some of the best and most prestigious chefs in the Region of Murcia, journalists, Designations of Origin Murcia, and institutions , among which were representatives of the Calasparra City Council and of the Stewardship Foundation of the Sanctuary of Our Lady of Hope.
The Mayor Teresa García, along with other members of the government team that participated in this meeting, highlighted the work carried out by the DO of Calasparra, for highlighting our great star product, which is Calasparra rice.This first meeting consisted of a visit to the rice fields, where attendees were able to learn first-hand and in origin what the cultivation of the only high mountain Denomination of Origin in Spain is like in its Bomba and Balilla X Sollana varieties.
The benefits of its cultivation, its sustainability, the coexistence of flora and fauna in a unique place, where the ditches, terraces, mouths and clean waters of the Mundo and Segura rivers make this rice preserve an amazing, lively and changing one Chromatic palette that goes from the greens in June until reaching the characteristic golden color of the ripe spike at the end of September.
But the color possibilities of rice do not end here.
It is from October, with each new harvest, when the chefs are in charge of "painting"the rice seasoning it with the best condiments and thus be able to serve it to the most demanding palates around the world, and it is at this moment when the alliance based on cooperation and reciprocity is sealed, which with this day has wanted to highlight.After the visit to the preserve and after the obligatory stop at "the viewpoint of the Sanctuary" to contemplate the spectacle of the rice fields and their different shades marked by the variety and growth of the cereal, the participants of this First Meeting were able to also visit another of the most emblematic and beautiful places in the Region, such as the Sanctuary of Our Lady of Hope, where the day ended with the tasting of a "rice and ribs with tender garlic and beans from the Segura river ", bathed with the best wines of the designations of origin of Murcia and accompanied in the starters by a selection of quality products of their own.
Like the Denomination of Origin Murcia and Murcia cheeses to Wine, salted meats or sausages.A day that has highlighted the importance of the synergy between the effort and dedication that the farmers and rice mills put in, with the imagination, personality and talent that the chefs put in, even giving rise to dishes with a Michelin Star.
An alliance that has been sealed in this meeting that "has come to stay", as stated by the president of the DOP Calasparra, José Martínez.
